Savor the Flavor of Summer

Whether you’re lounging in your favorite pool chair or having your neighbors over for a dip, it’s always a good idea to have refreshments on hand. Try these tasty recipes to add new flavor to your poolside gatherings.

Tropical Fruit Salad With Açai Smoothie Topping

This dish from Roberto Hasche, executive sous chef at Beau Rivage Resort and Casino in Biloxi, Miss., features a healthy boost from açai berries. Grown in Central and South America, this purple fruit has a hint of chocolate flavoring and is full of antioxidants, vitamins and minerals. Look for it in the freezer section of your grocery store, or check out açai retailers, such as Sambazon.com.

Prep time: 15 minutes
Makes: 10 servings

Equipment:
* Knife for slicing
* Cutting board
* Mixing bowl
* Serving spoon
* Serving dishes
* Forks

Ingredients:
* 1 pineapple
* 2 mangoes
* 1 papaya
* 4 kiwis
* bananas
* 2 carambolas (star fruit)
* 1 cup orange juice
* 2 açai frozen smoothie packs
* Ice

Preparation:
1. Peel and dice pineapple, mangoes, papaya, kiwis and bananas. Slice the carambolas, which don’t need to be peeled.
2. Toss fruit mixture and carambola slices in a bowl and add 1 cup orange juice.
3. Pour the two açai frozen smoothie packs on top.
4. Set the bowl on top of ice to keep the mixture extra cold, and allow guests to serve themselves.

Fruit Smoothies

This fruity treat is straight from the food experts at the Culinary Institute of America. Check out The Culinary Institute of America’s Breakfasts & Brunches (Lebhar-Friedman, 2005) for this and other gourmet delights. Experiment with this recipe by trying different fruit combinations to suit your own taste buds.

Prep time: 2 minutes
Makes: 2 servings

Equipment:
* Blender
* Measuring cups
* Serving cups

Ingredients:
* ½ cup plain yogurt
* ½ cup orange juice
* ¾ cup fresh fruit (strawberries, blueberries, raspberries, bananas, or whatever combination you like best)
* 1 tablespoon honey
* ½ cup ice

Preparation:
1. Place all ingredients in blender.
2. Blend for about 2 minutes or until mixture is smooth.
3. Pour into cups and enjoy!

Strawberry Frozen Yogurt

Nothing says summer like ripe red strawberries. Add them to yogurt in this recipe from Baking at Home with The Culinary Institute of America (Wiley, 2004), and you’ll wish the season would never end. If you’re looking for a flavorful alternative to traditional summer ice cream, yogurt is a tasty choice.

Active prep time: 7 minutes
Freezer time: 8½ hours
Makes: 1¼ quarts, or 8 servings

Equipment:
* Tossing spoons
* Measuring cup
* 2 medium mixing bowls
* 1 large mixing bowl
* Food processor
* Ice-cream machine
* Serving containers
* Spoons

Ingredients:
* 3 cups sliced hulled strawberries
* 1½ cups sugar, divided
* 1 tablespoon freshly squeezed lemon juice
* 3 cups whole or low-fat plain yogurt

Preparation:
1. Toss the strawberries with ½ cup of the sugar in a medium mixing bowl and allow them to sit, covered, at room temperature for 1 hour.
2. Puree 2 cups of the strawberries along with any syrup released by the fruit in a food processor or blender until very smooth. Set aside the remaining cup of strawberries to add later.
3. In the second medium mixing bowl, stir the puree, the remaining 1 cup sugar, and the lemon juice into the yogurt. Continue to stir until the sugar is completely dissolved.
4. Refrigerate the mixture for at least 4 hours or up to overnight and then freeze in an ice cream machine according to the manufacturer’s instructions.
5. Transfer the frozen yogurt from the machine to a large bowl and fold in the remaining sliced strawberries.
6. Pack the frozen yogurt in containers and let ripen in the freezer for 3 to 4 hours before serving.
